Don't
throw that turkey carcass away! Make soup. Soups freeze beautifully
TURKEY SOUP
Broth:
Turkey carcass
2 carrots
2 celery
1 onion
soup:
2 pounds carrots
potatoes
celery
rice
barley
Put bones in water with enough water to cover. 1-2 carrots,
peeled and put in whole. Add a couple of whole Bay leaves, do not
crush or use powder! 2 pieces of whole celery. Onion cut in
quarters. Cook down to make stock. Put through the strainer to take
out bones and vegetables, throw and keep only the broth. Place broth
in refrigerator and after cooled, skim off the fat. To make the
soup, add onion, barley, rice, carrots, potatoes, corn, celery and
drained corn if desired. If adding noodles, cook them in separate
water and rinse before adding or it will be starchy and nasty. Be
careful to not add too much rice.
