How to Can Chicken

I love canning chicken. I have canned it with the bone in (raw pack) and cooked, deboned. My personal favorite is to cook it first, remove it from the bone and can in pints. That way I can use it in so many things – from casseroles to chicken salad. Watch for chicken to go on sale. I buy the 10lb bags of chicken legs whenever they go on sale and fill up my roaster pans or boil them. Then you are able to can the broth as well. Canned Chicken -boneless Steam or boil chicken until until done. Remove skin and bones. Pack meat into hot jars, leaving 1-inch head space. Add 1/2 teaspoon salt per pint or 1 tsp per quart.
