Once a
Month Cooking - Southeast Asian Curry
Our family loves curry! It's a
great way to eat healthy and the coconut milk does not add a strong
coconut taste at all! This is a great megacooking recipe that was
shared by Louise and is a tried and true recipe at her house.
Ingredients:

6 cups cooked chicken, deboned and chopped

4 Tablespoons cooking oil

4 Tablespoons finely chopped onion

4 cloves garlic, minced

2 Tablespoons finely minced ginger root

4 cups coconut milk
-
1 Tablespoon curry powder
-
1 Tablespoons chili powder
-
1 teaspoon salt (opt.)
-
4 cups water
-
8 cups cooked brown rice
Directions:
Heat oil in frying pan. Sauté onion, garlic and ginger until brown.
Add coconut milk, curry, chili powder and salt. Stir fry 2-3 min. on
medium heat. Add chicken. Freeze rice and chicken mixture in separate
ziploc bags. Freeze.
To Prepare:
Thaw - heat in the microwave until heated through. Or bake in a
covered dish at 350* until hot approximately 20 - 30 minutes.
Yield: 10 servings
This will make 2 meals for a large family or 4 meals for a smaller
family
