Zucchini & Tomato Au Gratin

Cook Time: 25 minutes


  • 1/4 cup olive oil
  • 1 clove of garlic, peeled and crushed but in chunks
  • 4 zucchini slices (about 1/4" thick)
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • salt and black pepper to taste
  • 4 medium tomatoes sliced into thick slices
  • 1/2 c. grated strong cheddar cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of bread crumbs
  • 2 TBS butter, melted


  1. Preheat the oven to/350*F
  2. Heat the oil in a large skillet then add the garlic..
  3. Cook over medium heat til the garlic starts to brown slightly.
  4. Remove and discard the garlic.
  5. Add the zucchini.
  6. Cook, stirring often,until wilted then remove from the heat.
  7. Add spices.
  8. Butter a large shallow baking dish and layer the cooked zucchini with the sliced tomatoes in the dish.
  9. Mix the cheeses and sprinkle it on top.
  10. Mix together the bread crumbs and butter and sprinkle on top as well.
  11. Bake for 20 to 25 minutes
